Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup apple cider
  • 3 large eggs, room temperature
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (165°C). In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press mixture into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually mix in remaining sugar. Add sour cream and apple cider; blend until combined.
  3. Incorporate eggs one at a time on low speed. Stir in cinnamon until just mixed.
  4. Pour filling over the crust and gently tap to release air bubbles. Bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Cool in the oven for an hour with the door ajar, then refrigerate for at least four hours or overnight before serving.
