- 1 cup (170 g) semisweet chocolate chips
- 1/2 cup (120 ml) heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans and dust with flour.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix melted butter and eggs until frothy. Add milk and combine well.
- Pour the wet ingredients into the dry ingredients and stir gently until just mixed; do not overmix.
- Fold in the fresh raspberries carefully.
- Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool before frosting with chocolate ganache or whipped cream.
- Make the chocolate buttercream: beat the softened butter for 3 to 4 minutes until pale. Sift the powdered sugar and cocoa powder together and add a cup at a time on low speed, then the milk and vanilla. Beat 2 minutes more, adding a splash more milk if it is too stiff. Frost only once the bake has cooled completely.
- Make the ganache: heat the heavy cream until it just begins to steam, pour it over the chocolate chips, and leave it for 2 minutes before stirring to a smooth, glossy cream. Let it cool for 10 minutes to thicken before pouring it over the cooled cake.
