  • 20 jumbo pasta shells
  • 2 cups fresh mushrooms (cremini or button), finely chopped
  • 3 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 1 cup grated parmesan cheese
  • ½ cup sour cream
  • ¼ cup fresh parsley, chopped
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the jumbo pasta shells in salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, sauté the chopped mushrooms and minced garlic in olive oil until golden brown. Season with salt and pepper.
  3. In a bowl, mix the cooked mushrooms with cream cheese, parmesan cheese, sour cream, and parsley until smooth.
  4. Fill each shell with about two tablespoons of the mushroom mixture and place them in a greased baking dish.
  5. In the same skillet, combine heavy cream and Italian seasoning; warm through and drizzle over the stuffed shells.
  6. Bake at 375°F (190°C) covered for 25 minutes. Remove foil for the last five minutes to brown the top.
