Instructions

  1. Preheat your oven to 350°F (175°C). Grease three round cake pans and line with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and cocoa powder (if making chocolate layers). Gradually add dry ingredients to the wet mixture until just combined.
  4. Divide the batter evenly among prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  5. Allow cakes to cool in pans for about ten minutes before transferring them to wire racks to cool completely.
  6. Once cooled, layer cakes with frosting and sliced strawberries between each layer before frosting the outside.
  7. Make the vanilla buttercream: beat the softened butter for 3 to 4 minutes until pale and fluffy. Add the sifted powdered sugar a cup at a time on low speed, then the milk and vanilla. Beat 2 minutes more, until light and spreadable. Frost only once the bake has cooled completely.
