  • 24 Biscoff cookies (for crust)
  • 6 tbsp unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C). Crush Biscoff cookies into fine crumbs and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Beat together softened cream cheese and sugar until smooth. Add vanilla extract and mix well.
  3. Whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  4. Pour half of the cheesecake filling over the cooled crust, sprinkle with crumbled Biscoff cookies, then add the remaining filling.
  5. Chill in the refrigerator for at least 4 hours or overnight to set before serving.
