  • 1/2 cup honey
  • 1/2 cup buttermilk (or almond milk with 1/2 tablespoon vinegar)
  • 1 tablespoon dried culinary lavender (crushed)
  • 1 teaspoon vanilla extract

For the Honey Lavender Glaze

  • 1 cup powdered sugar
  • 2 tablespoons honey
  • 1-2 tablespoons milk (or plant-based milk)
  • 1 teaspoon dried lavender (for garnish, optional)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch sheet cake pan.
  • Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  • Add Eggs and Honey: Add the eggs one at a time, mixing well after each addition. Then, mix in the honey, buttermilk, crushed lavender, and vanilla extract.
  • Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  • Prepare Glaze: In a bowl, whisk together powdered sugar, honey, and enough milk to achieve a pourable consistency.
  • Glaze Cake: Once the cake is completely cool, drizzle the glaze over the top. Sprinkle with additional dried lavender if desired.
