Homemade Gooey Butter Cake

  • Author: nicole lopiz

  • Yield: 12 servings 1x

Description

A rich and indulgent dessert with a buttery base and a gooey, creamy top layer. This St. Louis classic is irresistibly delicious, with a slightly crispy exterior and a melt-in-your-mouth center!

Ingredients

Scale

For the Base Layer:

  • 1 box yellow cake mix
  • 1 large egg
  • 1/2 cup unsalted butter, melted

For the Gooey Top Layer:

  • 1 (8 oz) package cream cheese, softened
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9x13-inch baking dish with butter or cooking spray.
  2. Make the Base Layer:
    • In a large bowl, combine the yellow cake mix, 1 egg, and 1/2 cup melted butter. Mix until fully incorporated to form a dough-like consistency.
    • Press the mixture evenly into the bottom of the prepared baking dish, forming a solid base.
  3. Prepare the Gooey Top Layer:
    • In another large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add the 2 eggs, 1 teaspoon vanilla extract, and 1/2 cup melted butter to the cream cheese. Mix until well combined.
    • Gradually add the powdered sugar, mixing slowly at first to avoid mess, then increase speed until smooth.
  4. Assemble the Cake:
    • Pour the cream cheese mixture over the cake base and spread it evenly using a spatula.
    • Tap the dish gently to release any air bubbles.
  5. Bake:
    • Bake for 35-40 minutes, or until the top is golden brown and the edges are slightly crisp. The center should still be soft and gooey.
    • Remove from the oven and let the cake cool in the pan.
  6. Serve:
    • Once cooled, dust the top with extra powdered sugar for a sweet finish.
    • Slice into squares and serve at room temperature or slightly chilled for the best texture.

Notes

  • The center will remain gooey and soft even when fully baked, so avoid overbaking.
  • You can customize this cake by adding a layer of fruit preserves, chocolate chips, or nuts to the base for extra flavor.
