  • 4 cups low-sodium vegetable broth
  • 2 tbsp fresh lime juice
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat a large pot over medium heat. Add oil and sauté the onions and bell peppers for about 5 minutes until softened.
  2. Stir in minced garlic and cubed tofu; cook for an additional 2 minutes until fragrant.
  3. Add cumin, salt, and pepper; stir to combine.
  4. Pour in white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
