  • For the meatballs:
    • 1 pound ground beef (or turkey)
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
  • For the stew:
    • 1 tablespoon olive oil
    • 1 onion (diced)
    • 2 carrots (sliced)
    • 2 celery stalks (sliced)
    • 4 cups beef broth
    • 1 can (14.5 oz) diced tomatoes
    • 1 teaspoon dried thyme
    • 1 teaspoon paprika
    • Salt and pepper to taste
    • Fresh parsley (for garnish)

Instructions

  • Prepare Meatballs: In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Form into small meatballs.
  • Brown Meatballs: In a large pot, heat olive oil over medium heat. Brown meatballs on all sides (about 5-7 minutes). Remove and set aside.
  • Sauté Vegetables: In the same pot, add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  • Add Broth and Tomatoes: Pour in beef broth and diced tomatoes. Stir in thyme, paprika, salt, and pepper.
  • Simmer: Return meatballs to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Serve: Garnish with fresh parsley before serving.

Notes
