- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- For the stew:
- 1 tablespoon olive oil
- 1 onion (diced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Prepare Meatballs: In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Form into small meatballs.
- Brown Meatballs: In a large pot, heat olive oil over medium heat. Brown meatballs on all sides (about 5-7 minutes). Remove and set aside.
- Sauté Vegetables: In the same pot, add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
- Add Broth and Tomatoes: Pour in beef broth and diced tomatoes. Stir in thyme, paprika, salt, and pepper.
- Simmer: Return meatballs to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Serve: Garnish with fresh parsley before serving.
