  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can (14.5 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 8 oz whole wheat spaghetti (or gluten-free pasta)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the Meat Sauce: In a large skillet over medium heat, cook the ground turkey until browned. Add the chopped onion, garlic, bell pepper, and zucchini. Cook for an additional 3-4 minutes until the vegetables begin to soften.
  2. Add the Tomatoes and Spices: Stir in the crushed tomatoes, tomato paste, diced tomatoes, basil, oregano, Italian seasoning, salt, and pepper. Mix well, and then transfer everything to the slow cooker.
  3. Cook the Sauce: Cover and cook on low for 4-6 hours or on high for 2-3 hours. Stir occasionally to blend the flavors.
  4. Cook the Pasta: About 30 minutes before serving, cook the whole wheat spaghetti according to the package instructions. Drain and set aside.
  5. Serve: To serve, layer the spaghetti with the meat sauce and top with Parmesan cheese if desired. Enjoy!
