  • 2 firm cucumbers, sliced lengthwise into strips
  • 8 oz low-sodium deli turkey slices
  • 4 oz cream cheese (regular or low-fat)
  • 2 tbsp fresh herbs (dill or parsley), finely chopped
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers and slice them lengthwise into thin strips (about 1/4 inch thick).
  2. In a bowl, mix cream cheese with chopped herbs, salt, and pepper until well combined.
  3. Spread the herb-infused cream cheese on one side of each cucumber strip.
  4. Place a slice of turkey on top of the cream cheese and roll up tightly.
  5. Repeat until all ingredients are used. Optionally, chill in the fridge for 15 minutes before serving.
  6. Serve on a platter, garnished with extra herbs if desired.
