  • 1 large egg
  • ½ cup Greek yogurt (or applesauce for a dairy-free option)
  • ⅓ cup honey (or maple syrup)
  • 1 ½ cups whole wheat flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup chocolate chips or nuts (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  • Mash the Bananas: In a large bowl, mash the ripe bananas until smooth. You should have about 1 ½ cups of mashed bananas.
  • Mix Wet Ingredients: Add the egg, Greek yogurt, and honey (or maple syrup) to the mashed bananas. Mix until well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  • Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing.
  • Add Optional Ingredients: If desired, fold in chocolate chips or nuts.
  • Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  • Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
