- 1 ½ cups whole wheat flour
- 1 cup rolled oats

- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- Pinch of salt
- ½ cup chocolate chips or nuts (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- Mash the Bananas: In a large bowl, mash the ripe bananas until smooth. You should have about 1 ½ cups of mashed bananas.
- Mix Wet Ingredients: Add the egg, Greek yogurt, and honey (or maple syrup) to the mashed bananas. Mix until well combined.
- Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
- Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing.
- Add Optional Ingredients: If desired, fold in chocolate chips or nuts.
- Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
