Ingredients
Scale
- 1 1/2 lbs chicken thighs (boneless and skinless)
- 1 cup soy sauce
- 1 cup brown sugar (packed)
- 1 cup pineapple juice
- 4 cloves garlic (chopped)
- 1 tbsp fresh ginger (minced)
Instructions
- Marinate the Chicken: In a bowl or Ziploc bag, combine soy sauce, brown sugar, pineapple juice, garlic, and ginger. Mix until the sugar dissolves. Add chicken, ensuring it’s fully coated. Marinate in the fridge for at least 4 hours or overnight.
- Prepare the Marinade: Remove chicken from the marinade and set aside. Simmer the remaining marinade in a saucepan for 5-10 minutes, then let cool.
- Grill the Chicken: Preheat the grill to medium-high. Grill chicken for 6-8 minutes per side, until an internal temperature of 165°F is reached. Brush with some of the cooled marinade while grilling.
- Serve: Transfer chicken to a dish and pour the remaining marinade over it. Serve immediately.
Notes
- For best results, marinate the chicken overnight.
- Ensure the marinade is simmered to kill any bacteria from the raw chicken.
- If you don’t have a grill, the chicken can be baked at 400°F for 20-25 minutes.
