Description
Halloumi pasta with tomato sauce is a comforting Mediterranean dish that combines the richness of halloumi cheese with a flavorful, tangy tomato sauce. This easy-to-make pasta is perfect for a weeknight dinner, offering a satisfying meal that’s both creamy and savory.
Ingredients
Scale
- 200g (7 oz) pasta (spaghetti, penne, or your choice)
- 200g (7 oz) halloumi cheese, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 can (400g/14 oz) crushed tomatoes
- 1 tbsp dried oregano
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
- 1/4 cup Parmesan cheese (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1 cup of pasta water before draining.
- Cook the Halloumi: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add halloumi slices and cook for 2-3 minutes on each side, until golden brown. Remove from the pan and set aside.
- Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute, until fragrant. Pour in the crushed tomatoes, oregano, salt, and pepper. Simmer for 10-15 minutes, letting the flavors meld together.
- Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water to achieve your desired consistency.
- Finish the Dish: Add the crispy halloumi to the pasta and sauce, gently mixing. Garnish with fresh basil and optional Parmesan cheese before serving.
Notes
- Texture Tip: Halloumi adds a chewy, slightly crispy texture that contrasts perfectly with the smooth tomato sauce.
- Spice: Add a pinch of red pepper flakes to the sauce for a subtle kick.
- Vegan Option: Replace the halloumi with a plant-based cheese to make it vegan-friendly.
