  • 200g (7 oz) pasta (spaghetti, penne, or your choice)
  • 200g (7 oz) halloumi cheese, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 can (400g/14 oz) crushed tomatoes
  • 1 tbsp dried oregano
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • 1/4 cup Parmesan cheese (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Cook the Halloumi: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add halloumi slices and cook for 2-3 minutes on each side, until golden brown. Remove from the pan and set aside.
  3. Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute, until fragrant. Pour in the crushed tomatoes, oregano, salt, and pepper. Simmer for 10-15 minutes, letting the flavors meld together.
  4. Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water to achieve your desired consistency.
  5. Finish the Dish: Add the crispy halloumi to the pasta and sauce, gently mixing. Garnish with fresh basil and optional Parmesan cheese before serving.
