- 1 cup shredded cheddar cheese

- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Prepare the Chicken:
Preheat your grill to medium heat. Using a sharp knife, make a slit in the middle of each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through. - Make the Filling:
In a bowl, mix together the softened cream cheese, shredded cheddar cheese, chopped jalapeños, garlic powder, onion powder, paprika, salt, and pepper. Stir until well combined. - Stuff the Chicken:
Spoon the cream cheese mixture into the pockets of the chicken breasts, pressing the filling in firmly. Secure the opening with toothpicks if needed to keep the stuffing inside during grilling. - Grill the Chicken:
Brush the chicken with olive oil and season with a little salt and pepper. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through. - Rest and Serve:
Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Remove the toothpicks before serving, and garnish with extra chopped jalapeños or fresh cilantro if desired.
