- 10 oz (280g) tortilla chips
- 1 cup black beans (canned or cooked)
- 1 cup corn kernels (fresh or frozen)
- 1 red onion, finely chopped
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 ripe avocado, diced
- Fresh cilantro, chopped (for garnish)
- Sour cream and salsa (optional, for serving)
Instructions
- Marinate the Steak:
In a small bowl, mix the chipotle peppers, olive oil, lime juice, garlic, cumin, paprika, salt, and pepper. Coat the flank steak in this marinade, making sure it’s fully covered. Let it marinate in the fridge for at least 30 minutes (up to 2 hours for a stronger flavor). - Grill the Steak:
Preheat your grill to medium-high heat (about 400°F). Grill the steak for 4-6 minutes per side, depending on thickness and desired doneness. For medium-rare, aim for an internal temperature of 130°F. Remove from the grill and let it rest for 5 minutes before slicing it against the grain into thin strips. - Prepare the Nacho Base:
Preheat your oven to 375°F. On a large baking sheet, spread the tortilla chips evenly in a single layer. Scatter black beans, corn, and red onion on top of the chips. - Add Cheese and Bake:
Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the chips. Bake in the preheated oven for 8-10 minutes, until the cheese is fully melted and bubbly. - Assemble the Nachos:
