For the Chicken Drumsticks:

  • 8 chicken drumsticks (bone-in, skin-on)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper to taste
  • 1 tbsp lemon juice
  • 1 tbsp honey (optional)

For the Potatoes:

  • 4 medium potatoes (Yukon Gold or red)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  • Marinate the Chicken: In a bowl, combine chicken drumsticks with olive oil, garlic, paprika, onion powder, thyme, rosemary, salt, pepper, lemon juice, and honey (if using). Toss to coat, and marinate for at least 30 minutes (or up to overnight).
  • Prepare the Potatoes: Cut the potatoes into wedges. In a bowl, toss the wedges with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated.
  • Preheat the Grill: Heat the grill to medium-high heat (375°F - 400°F). Clean and oil the grill grates.
  • Grill the Chicken and Potatoes:
    • Place the chicken drumsticks on the grill, cooking for about 25-30 minutes, turning occasionally. Use a meat thermometer to check that the chicken reaches 165°F (74°C).
    • Meanwhile, place the potatoes on the cooler side of the grill (indirect heat) and cook for 20-25 minutes, flipping halfway through, until golden and crispy.
  • Serve: Once the chicken is fully cooked and the potatoes are crispy, remove them from the grill. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired. Enjoy!

  • Chicken Tip: For the juiciest chicken, marinate it for at least 2 hours, or overnight if you have the time.
  • Potato Tip: If you don’t have a grill basket, place the potatoes on a piece of foil to prevent them from falling through the grates.
