  • 2 cups granulated sugar
  • 4 large egg yolks
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 2 cups sweetened shredded coconut
  • 1 cup chopped pecans


Instructions

  • Prepare the Egg Mixture: In a medium saucepan, whisk together the 4 egg yolks and 1 cup evaporated milk. Cook over medium heat, stirring continuously until thickened (about 10-12 minutes).
  • Combine with Butter and Sugar: Remove from heat and stir in 2 cups granulated sugar and 1 cup (2 sticks) softened butter until the butter melts and the mixture is smooth.
  • Add Flavorings: Stir in 1 teaspoon vanilla extract, then fold in 2 cups shredded coconut and 1 cup chopped pecans until evenly distributed.
  • Cool: Allow the frosting to cool to room temperature before spreading it on your cake.

Notes
