- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (14.5 oz) crushed tomatoes
- ½ cup chicken broth
- ¼ cup heavy cream
- 2 tbsp unsalted butter
- ½ tsp dried oregano
- ½ tsp red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- Salt & pepper to taste
Instructions
- Sear the Chicken: Heat 2 tbsp of olive oil and 1 tbsp of butter in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until golden brown and fully cooked. Remove chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, sauté the chopped onion for 2-3 minutes until soft. Add the minced garlic and cook for 1 minute. Stir in the crushed tomatoes, chicken broth, oregano, and red pepper flakes (if using). Let simmer for 5-7 minutes, reducing the sauce slightly.
- Finish the Sauce: Stir in the heavy cream and 2 tbsp butter, allowing the sauce to thicken. Taste and adjust seasoning with salt and pepper if needed.
- Combine Chicken & Sauce: Return the chicken to the skillet, spoon some sauce over the top, and simmer for 5-10 minutes until the chicken is heated through and fully coated with sauce.
- Garnish & Serve: Remove from heat and sprinkle with fresh basil. Serve over pasta, rice, or roasted vegetables.
