Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line with parchment paper for easy removal.
- Make the Cake Batter: In a large bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract. Alternate adding the dry ingredients and milk to the butter mixture, mixing until just combined.
- Add the Sprinkles: Gently fold in the rainbow sprinkles. Be careful not to overmix, as the colors can bleed.
- Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Prepare the Frosting: Beat the butter until creamy, then gradually add powdered sugar. Add milk and vanilla extract, beating until smooth and fluffy.
- Assemble the Cake: Once the cakes have cooled, place one layer on a serving plate. Spread a layer of frosting over the cake, then top with a handful of sprinkles. Add the second layer of cake, then frost the top and sides of the entire cake. Decorate with more sprinkles.
