  • 1 medium sweet potato (about 200g), peeled and diced
  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 2 whole wheat tortillas (8-inch)
  • 1 ripe avocado
  • 1/2 cup salsa (your choice)
  • Juice of 1 lime

Instructions

  1. Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, salt, pepper, and optional spices; roast for 25-30 minutes until tender.
  2. In a saucepan over medium heat, combine black beans with lime juice and seasoning; heat until warmed through.
  3. Mash avocado with lime juice, salt, and pepper in a bowl until creamy.
  4. Spread mashed avocado on each tortilla, then layer with roasted sweet potatoes, black beans, and salsa.
  5. Roll tortillas tightly, folding in sides to secure fillings.
  6. Cut wraps diagonally in half and serve immediately with extra salsa if desired.
