  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 whole wheat or corn tortillas
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss diced sweet potatoes with olive oil, cumin, chili powder, salt, and pepper. Spread on the baking sheet in a single layer.
  3. Roast sweet potatoes for 25–30 minutes until tender and caramelized, tossing halfway through.
  4. In another bowl, combine black beans with chopped cilantro and lime juice.
  5. Assemble each tortilla by layering roasted sweet potatoes followed by the black bean mixture.
  6. Roll the tortillas tightly and serve with extra lime wedges.
