- ¼ cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (as needed for consistency)
Instructions
- Preparation: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Mix Wet Ingredients: In a large bowl, combine pumpkin puree, brown sugar, granulated sugar, egg, melted butter, and vanilla extract. Mix until smooth.
- Combine Dry Ingredients: In another bowl, whisk together rolled oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Scoop Cookies: Drop spoonfuls of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake for 12-15 minutes or until the edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
