  • 2 medium sweet potatoes (about 400g)
  • 1 can black beans (15 oz or 425g), drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ cup rolled oats
  • ¼ cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Peel and cube the sweet potatoes. Boil in salted water until tender, about 15 minutes. Drain well.
  2. In a large bowl, mash the cooked sweet potatoes until smooth but slightly chunky.
  3. Add black beans (slightly smashed), onion, garlic, oats, cilantro, cumin, paprika, salt, and pepper. Mix until well combined.
  4. Shape the mixture into palm-sized patties.
  5. Heat olive oil in a non-stick skillet over medium heat and cook each patty for about 4 minutes per side until golden brown.
  6. Transfer patties to paper towels to absorb excess oil. Serve warm or cool completely before packing into lunch boxes.
