  • 4 cups fresh sweet corn kernels (or frozen, thawed)
  • 1 cup finely diced red onion
  • 1 medium jalapeño pepper, diced (seeds removed for less heat)
  • 1 cup fresh cilantro, roughly chopped
  • 2-3 tablespoons freshly squeezed lime juice
  • ½ cup mayonnaise (or Greek yogurt)
  • 1 teaspoon chili powder
  • Salt, to taste

Instructions

  1. If using fresh corn, boil or grill until tender (about 5-7 minutes), then cut the kernels off the cob. If using frozen corn, thaw it first.
  2. Finely dice the red onion and jalapeño pepper. Roughly chop the cilantro.
  3. In a large bowl, combine corn kernels, red onion, jalapeño, cilantro, mayonnaise (or yogurt), lime juice, and chili powder; stir until well-coated.
  4. Taste and adjust seasoning with more lime or salt if needed.
  5. Cover and chill in the refrigerator for at least one hour before serving to let flavors meld.
  6. Serve chilled as a side dish or light main course.
