  • 4 large eggs
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup baby carrots, halved
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Place eggs in a saucepan and cover with water about an inch above. Bring to a rolling boil over medium-high heat.
  2. Once boiling, cover the pot and remove from heat. Let sit for 9-12 minutes based on desired yolk firmness.
  3. Transfer eggs to an ice bath for five minutes to cool and stop cooking.
  4. While cooling, wash and chop bell peppers, carrots, cucumber, and cherry tomatoes into bite-sized pieces.
  5. Gently tap cooled eggs on the counter until cracked all over before peeling under running water.
  6. In your lunch box, arrange veggies in one section and sliced hard-boiled eggs in another. Season with salt or pepper if desired.
