  • 2 cups (240 g) powdered sugar, sifted
  • 3 tbsp whole milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Beat in one egg followed by vanilla extract until smooth.
  5. Gradually add the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized portions onto ungreased baking sheets, spaced two inches apart.
  7. Bake for 8-10 minutes until edges are lightly golden but centers remain soft.
  8. Make the icing: whisk the sifted powdered sugar with the milk and vanilla until smooth, adding the milk a teaspoon at a time at the end so you can stop at a thickness that spreads without running. Ice the cookies only once they are completely cool, and leave them to set for 30 minutes.

Notes

Chill dough in the refrigerator for at least one hour before baking to prevent spreading.
