Description

Colcannon is a traditional Irish dish that beautifully blends creamy mashed potatoes with tender greens, typically cabbage or kale. This hearty comfort food not only warms the soul but also offers a delightful mix of flavors and textures that can be enjoyed any time of the year.

Ingredients

Scale
  • 2 pounds starchy potatoes (like Russets or Yukon Gold)
  • 2 cups chopped cabbage or kale
  • 4 tablespoons unsalted butter
  • 1/2 cup milk or heavy cream
  • 3 chopped green onions
  • Salt and pepper to taste

Instructions

  1. Peel and quarter the potatoes, then boil them in salted water until fork-tender (about 15-20 minutes). Drain well.
  2. While the potatoes are boiling, sauté the chopped cabbage or kale in melted butter over medium heat until wilted.
  3. Mash the drained potatoes until smooth, then stir in the butter and milk or cream until creamy.
  4. Fold in the sautéed greens and chopped green onions, mixing until well combined.
  5. Season with salt and pepper to taste before serving.
