Instructions

Heat olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and celery. Sauté for 5 minutes until vegetables soften and onions become translucent. Add minced garlic and cook for another minute until fragrant. - Add Liquids and Seasonings:
Stir in vegetable broth, diced tomatoes (with juice), oregano, thyme, and bay leaf. Bring the soup to a gentle simmer. - Cook the Pasta:
Add the alphabet pasta to the pot and cook for 8-10 minutes, stirring occasionally, until pasta is al dente. - Add Frozen Peas:
Stir in the frozen peas and cook for an additional 2-3 minutes until peas are heated through. - Season and Serve:
