  • 1 small onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf (optional)
  • 1 1/2 cups alphabet pasta
  • 1 cup frozen peas
  • Salt and pepper, to taste

Instructions

  • Sauté Vegetables:
    Heat olive oil in a large pot over medium heat. Add chopped onion, diced carrots, and celery. Sauté for 5 minutes until vegetables soften and onions become translucent. Add minced garlic and cook for another minute until fragrant.
  • Add Liquids and Seasonings:
    Stir in vegetable broth, diced tomatoes (with juice), oregano, thyme, and bay leaf. Bring the soup to a gentle simmer.
  • Cook the Pasta:
    Add the alphabet pasta to the pot and cook for 8-10 minutes, stirring occasionally, until pasta is al dente.
  • Add Frozen Peas:
    Stir in the frozen peas and cook for an additional 2-3 minutes until peas are heated through.
  • Season and Serve:
    Remove the bay leaf and taste the soup. Add salt and pepper as needed. Serve hot, garnished with fresh herbs or cheese if desired.

Notes

  • For a creamier texture, you can stir in a splash of cream or coconut milk at the end of cooking.
