Description

  • 8 oz fresh udon noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas, trimmed
  • 1 cup firm tofu or chicken breast, sliced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tsp sesame oil
  • 2 cloves garlic, minced

Instructions

  1. 1. Boil a large pot of water and cook udon noodles according to package instructions until tender (8-10 minutes). Drain and set aside.
  2. 2. While the noodles cook, chop the vegetables and prepare your protein.
  3. 3. In a large skillet over medium-high heat, add sesame oil. Sauté chicken for 5-7 minutes or fry tofu until crispy.
  4. 4. Add vegetables to the skillet and stir-fry for about 3 minutes until tender yet crisp.
  5. 5. Combine cooked noodles with soy sauce and brown sugar in the skillet. Toss everything together to coat evenly.
  6. 6. Serve hot, garnished with sesame seeds.
