  • 6 rice paper wrappers
  • 1 ripe mango (sliced into thin strips)
  • 1 cup fresh pineapple (sliced into thin strips)
  • 1 cucumber (cut into matchsticks)
  • ½ cup fresh mint leaves
  • 2 tbsp raw honey
  • 1 tbsp freshly squeezed lime juice

Instructions

  1. Wash all fruits thoroughly and slice them into desired shapes.
  2. Soften rice paper wrappers by dipping each one in warm water for about 10-15 seconds until pliable. Lay them flat on a clean surface.
  3. On the bottom third of each wrapper, place a few pieces of mango, pineapple, cucumber, and several mint leaves.
  4. Roll the wrapper tightly but gently from the bottom up, tucking in the sides as you go.
  5. For the honey dip, mix honey and lime juice in a small bowl until well combined.
  6. Serve the spring rolls on a platter alongside the honey dip.
