Instructions

  2. Add the chopped onions and sauté for an additional 3-4 minutes until translucent.
  3. Layer in the diced potatoes and optional carrots, mixing gently. Pour in enough chicken stock to cover the ingredients by about an inch.
  4. Bring to a gentle boil; then reduce heat to low. Cover and let simmer for about 1 hour.
  5. Taste and adjust seasoning with salt and pepper before serving. Garnish with fresh parsley.
