  • 8 oz fusilli or rotini pasta
  • 4 oz sliced salami
  • 1 cup pitted black olives
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta until al dente according to package instructions; drain and rinse under cold water.
  2. In a large bowl, combine cooled pasta with salami, olives, tomatoes, cucumber, and red onion.
  3. In a small bowl or jar, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and toss to coat evenly. Adjust seasoning if necessary.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
