  • 8 slices thick-cut bacon

  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.

  3. While the bacon cooks, chop the cherry tomatoes and romaine lettuce. Dice the avocado just before serving.
  4. In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Combine cooked pasta, bacon, tomatoes, lettuce, and avocado in a large bowl. Drizzle with dressing and toss gently.
