Ingredients

  • ½ head green cabbage, finely shredded
  • 2 medium carrots, grated
  • 1 bell pepper (red or yellow), thinly sliced
  • ½ cup fresh cilantro, chopped
  • ¼ cup unsalted peanuts, roughly chopped
  • 1 tbsp toasted sesame oil
  • ¼ cup creamy natural peanut butter
  • 2 tbsp low-sodium soy sauce
  • Juice from 1 lime

Instructions

  1. Wash and finely shred the cabbage, grate the carrots, and slice the bell pepper. Combine them in a large bowl.
  2. Chop the cilantro and sprinkle it over the veggies.
  3. In a separate bowl, whisk together peanut butter, soy sauce, sesame oil, and lime juice until smooth.
  4. Pour the dressing over the vegetable mix and toss well to coat.
  5. Just before serving, sprinkle chopped peanuts on top for added texture.
  6. Enjoy chilled as a side dish or main course.
