  • 1 cup uncooked quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (any color), chopped
  • 1 ripe avocado, sliced
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Rinse 1 cup of quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  2. While the quinoa cooks, chop the cucumber, halve the cherry tomatoes, chop the bell pepper, and slice the avocado.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  4. In a large bowl, mix cooked quinoa with chopped veggies and pour over the dressing. Toss gently until well coated.
  5. Portion into bowls or plates and top each serving with avocado slices.
