- 1 tbsp fresh ginger, grated
- 1 tbsp sesame oil

- While the rice cooks, press tofu to remove excess moisture for about 15 minutes.
- Chop bell peppers and broccoli into bite-sized pieces.
- In a large skillet over medium-high heat, add oil and sauté cubed tofu until golden brown (8-10 minutes).
- Add bell peppers and broccoli to the skillet; stir-fry for 5 minutes until slightly tender.
- In a small bowl, mix soy sauce, garlic, ginger, and sesame oil. Pour over the stir-fry mixture.
- Add cooked brown rice to the skillet; stir well to combine everything evenly (2 minutes).
