  • 14 oz firm tofu, pressed and cubed
  • 1 cup long-grain brown rice
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced

Instructions

  1. Cook the brown rice according to package instructions.
  2. Press the tofu for about 15 minutes to remove excess moisture; then cut into bite-sized cubes.
  3. In a large skillet or wok over medium-high heat, add oil and cook tofu cubes until golden brown on all sides (about 8 minutes).
  4. Add bell peppers, broccoli, and carrots to the skillet; stir-fry for another 5 minutes until vegetables are crisp-tender.
  5. In a small bowl, whisk together soy sauce, sesame oil, and minced garlic; pour over the stir-fried tofu and veggies.
  6. Serve hot over cooked brown rice and garnish with green onions or sesame seeds if desired.
