  • 2 cups short-grain sushi rice
  • 4 sheets nori (seaweed)
  • 8 oz sushi-grade salmon or tuna
  • 1 medium cucumber, thinly sliced
  • 1 medium avocado, thinly sliced
  • 2 medium carrots, julienned
  • Soy sauce for dipping
  • Wasabi (to taste)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes), then cool slightly.
  2. Thinly slice the fresh fish and vegetables.
  3. On a bamboo mat or cutting board, lay a sheet of nori. Spread an even layer of sushi rice over the nori, leaving an inch at the top.
  4. Place fish and vegetables in the center of the rice.
  5. Roll tightly using the bamboo mat and seal the edge with water.
  6. Slice into bite-sized pieces with a sharp knife dipped in water.
  7. Serve with soy sauce and wasabi on the side.
