  • 4 links Italian or breakfast sausage
  • 4 medium Yukon gold potatoes (diced)
  • 1 medium onion (diced)
  • 1 cup bell peppers (diced, mixed colors)
  • 3 cloves garlic (minced)
  • Salt to taste
  • Pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Wash and chop the potatoes into bite-sized pieces. Dice the onions and bell peppers, then mince the garlic.
  2. Heat a large skillet over medium-high heat and add olive oil.
  3. Once shimmering, add sausages and cook until browned on all sides (about 5 minutes). Remove from pan.
  4. In the same skillet, sauté onions and bell peppers until softened (about 3 minutes). Stir in minced garlic for another minute.
  5. Add diced potatoes along with salt, pepper, and oregano; cover and cook for about 10 minutes until fork-tender.
  6. Return browned sausages to the skillet and simmer for an additional 5 minutes.
  7. Serve hot off the skillet.
