  • 1 medium onion, finely chopped
  • 1 cup brown sugar
  • 1/2 cup apple cider vinegar

  • Pinch of salt
  • 2 tablespoons olive oil

Instructions

  1. Wash and chop the rhubarb into small pieces. Finely chop the onion.

  3. Add rhubarb, brown sugar, and apple cider vinegar to the pot; stir well.

  5. Bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes until thickened.
  6. Remove from heat and cool completely before transferring to jars.
