Ingredients

Scale
  • 2 ½ cups cake flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 5 large eggs (room temperature)
  • 1 cup whole milk (or buttermilk)
  • Gel food coloring (red, orange, yellow, green, blue, purple)

For the vanilla buttercream

  • 1 cup (226 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 2 tbsp whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three round cake pans.
  2. In a bowl, whisk together the cake flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until fluffy; gradually mix in the dry ingredients.
  4. Add eggs one at a time followed by the milk; mix until smooth.
  5. Divide the batter into six bowls; color each portion with different gel food colors.
  6. Pour the colored batters into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool completely before frosting with your favorite icing.
  8. Make the vanilla buttercream: beat the softened butter for 3 to 4 minutes until pale and fluffy. Add the sifted powdered sugar a cup at a time on low speed, then the milk and vanilla. Beat 2 minutes more, until light and spreadable. Frost only once the bake has cooled completely.
