  • 1 cup canned pumpkin puree (100% pure)
  • 1 cup rolled oats
  • 1 scoop (30g) vanilla protein powder
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8x8-inch baking dish with parchment paper.
  3. In a large bowl, mix pumpkin puree, maple syrup, and eggs (if using) until smooth.
  4. In another bowl, combine oats, protein powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
  6. Pour the batter into the prepared dish and spread evenly. Bake for 25-30 minutes or until golden brown.
  7. Allow to cool completely before slicing.
