Ingredients

Scale
  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1 cup full-fat coconut milk
  • 1/4 cup freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 2 tbsp honey

Instructions

  1. In a large bowl, whisk together coconut milk, lime juice, minced garlic, honey, salt, and pepper until well combined.

  4. Remove the chicken from the marinade (letting excess drip off) and place skin-side down on the grill.
  5. Grill for about 7-10 minutes per side or until an internal temperature of 165°F (75°C) is reached.
  6. Let the chicken rest for 5 minutes before serving.
