  • 4 large fresh eggs
  • 2 medium carrots (1 cup, cut into sticks)
  • 1 medium cucumber (1 cup, cut into sticks)
  • 2 celery stalks (1 cup, cut into sticks)
  • ½ cup hummus or ranch dressing for dipping (optional)

Instructions

  1. Place the eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat.
  2. Once boiling, cover the pot and remove from heat. Let sit for 9-12 minutes for desired yolk consistency.
  3. Prepare an ice bath while the eggs cook by filling a bowl with cold water and ice.
  4. After cooking, plunge the eggs into the ice bath for about 5 minutes.
  5. Meanwhile, wash and cut the carrots, cucumber, and celery into uniform sticks.
  6. Peel the cooled eggs under running water for easy shell removal.
  7. Slice the eggs in half or quarters and plate alongside veggie sticks and optional dips.
