  • 1 lb lean ground beef
  • 1 packet taco seasoning (or homemade mix)
  • 1 cup cherry tomatoes, diced
  • 2 cups lettuce, chopped
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • ½ cup sour cream (or Greek yogurt)
  • 1 avocado, sliced

Instructions

  1. Cook the ground beef in a skillet over medium heat until browned. Drain fat and mix in taco seasoning with a splash of water. Simmer for 5 minutes.
  2. While the beef cooks, chop the lettuce and dice the tomatoes.
  3. In mason jars, layer seasoned beef, black beans, lettuce, tomatoes, cheese, and top with sour cream.
  4. Add avocado slices just before serving to keep them fresh.
  5. Seal jars for on-the-go meals or serve immediately.
