  • 1 cup shredded sharp cheddar cheese
  • 4 large flour tortillas
  • 1 cup sliced bell peppers
  • 1 medium sliced onion

  • 1 tsp paprika
  • 2 tbsp olive oil
  • Sour cream (for serving)

Instructions

  1. Season the shredded chicken with salt, pepper, cumin, and paprika.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes until browned and cooked through; set aside.
  3. In the same skillet, sauté the onions and bell peppers until soft (about 5 minutes).
  4. Place one tortilla in the skillet. Sprinkle half with cheese, add chicken and veggies, then fold over.
  5. Cook each side for 3-4 minutes until golden brown and crispy.
  6. Slice into wedges and serve warm with sour cream.
