Ingredients

Scale
  • For the Bread Bowls:
    • 4 round bread loaves (sourdough or artisan)
    • Olive oil or butter (for brushing)
  • For the Filling:
    • 8 large eggs
    • 1 cup diced vegetables (bell peppers, spinach, onions)
    • 1 cup cooked meat (bacon, sausage, or ham, optional)
    • 1 cup shredded cheese (cheddar, mozzarella, or feta)
    • Salt and pepper to taste
    • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Bread: Cut off the tops of the bread loaves and hollow them out, leaving about an inch of bread around the edges. Brush the insides with olive oil or butter. Toast the hollowed bread in the oven for 10–15 minutes until golden.
  3. Make the Filling: In a skillet, sauté the diced vegetables until tender. In a bowl, whisk the eggs with salt and pepper. Combine the sautéed vegetables and any cooked meats with the egg mixture, then stir in the cheese.
  4. Fill and Bake: Carefully fill each toasted bread bowl with the egg mixture. Return to the oven and bake for 15–20 minutes or until the eggs are set.
  5. Serve: Let cool slightly, garnish with fresh herbs if desired, and enjoy!
