- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese (grated)
- 1 egg
- 3 cloves garlic (minced, divided)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 tablespoons butter
- 1/2 cup chicken broth
- Fresh parsley (for garnish)
Instructions
- Make Meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, half of the minced garlic, Italian seasoning, salt, and pepper. Mix until well combined. Form into small, bite-sized meatballs.
- Sear Meatballs (Optional): In a skillet, melt 1 tablespoon of butter over medium heat. Add meatballs in batches and sear until golden brown (about 3-4 minutes). This adds extra flavor but can be skipped if short on time.
- Prepare Crockpot: Add remaining butter, chicken broth, and remaining garlic to the crockpot. Place meatballs in the crockpot, coating them in the garlic butter mixture.
- Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until meatballs are fully cooked.
- Serve: Garnish with fresh parsley and serve over pasta, rice, or with crusty bread to soak up the sauce.
Notes
- For added flavor, stir in a splash of lemon juice or sprinkle with red pepper flakes before serving.
