Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
8 oz mushrooms, sliced
2 cups spinach, fresh
1 cup heavy cream
1/2 cup Parmesan cheese, grated
1 tsp dried Italian seasoning
Salt and pepper to taste
Instructions
Heat olive oil and butter in a skillet over medium heat. Cook chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove from the pan and set aside.
In the same pan, add garlic and mushrooms. Sauté for 3-4 minutes until tender.
Add spinach and cook until wilted. Pour in the heavy cream, Parmesan cheese, and Italian seasoning. Stir well and simmer for 3-4 minutes until the sauce thickens.
Return chicken to the pan and coat with the creamy sauce. Simmer for an additional 2 minutes.
Season with salt and pepper to taste, then serve.
Notes
- For extra flavor, try adding sun-dried tomatoes to the sauce.
- To make it lower-carb, serve over zucchini noodles or cauliflower rice.
- You can use bone-in chicken for more flavor, but adjust the cooking time.
